“True North” Chicken Rub

This rub works for pretty much any chicken part or recipe that involves indirect heat. However, you probably don’t want to use this in a grilling situation, since the brown sugar will just burn. Mix everything thoroughly and store it in an air-tight container. Be sure to use this one liberally – the more the merrier.

1/2 cup brown sugar
1/4 cup onion salt
1/4 cup paprika
2 tablespoons garlic salt
1 tablespoon chili powder
1 tablespoon coarse-ground black pepper
2 teaspoons dried rubbed sage
1 teaspoon dried basil
1 teaspoon dried rosemary
1/2 teaspoon cayenne

Mix well with a fork and store it in an air-tight container.
